Therapeutic nutrition consultations are led by Jan Zerzán, a dietology specialist with over 40 years of clinical and personal experience, including his own documented recovery from cancer through dietary intervention. The approach at Institut Celostní Medicíny centres on identifying individual food sensitivities that drive intestinal inflammation and immune dysregulation — the hidden dietary triggers behind a wide range of chronic conditions. Rather than prescribing generic diets, Zerzán tests each patient individually and builds a personalised elimination and rebuilding protocol.
Jan Zerzán's work in dietology is rooted in a fundamental insight from his own experience: that the food most people eat without apparent immediate reaction can nonetheless silently inflame the intestinal lining, suppress immune function, and contribute to a wide spectrum of chronic disease — from skin conditions and allergies to fatigue, weight dysregulation, and autoimmune disorders. His consultations translate this insight into a practical, testable, and individualised protocol. The consultation begins with a thorough dietary and symptom history: what the patient eats, when, in what combinations, and how symptoms correlate with food patterns over time. Zerzán then conducts hands-on individual food sensitivity testing — a form of applied kinesiology or manual muscle testing that identifies which foods create a stress response in that particular person's system. This produces a personalised list of foods to avoid (even temporarily) and foods that support that individual's gut ecology and immune balance. The elimination phase removes the identified triggers — commonly gluten-containing grains, specific dairy products, certain fruits or nightshades, or foods with high lectin content — while introducing anti-inflammatory and gut-supportive alternatives. The goal is not permanent restriction but a staged rebuilding of intestinal integrity, after which foods are reintroduced methodically and tolerance assessed. Zerzán's approach draws on over four decades of clinical observation, his published work on therapeutic nutrition (he has authored multiple books), and his own healing journey. Conditions that have responded well in the clinic's patient population include irritable bowel syndrome, Crohn's disease, ulcerative colitis, eczema and psoriasis, chronic sinusitis, recurrent respiratory infections, metabolic syndrome, type 2 diabetes management, and oncological support during or after conventional treatment. Follow-up consultations monitor progress, adjust the protocol, and address questions as the patient works through the elimination and rebuilding phases. Each consultation is 500 Kč. Patients are provided with written guidelines to take away. The clinic notes that receipts are issued in compliance with Czech law 112/2016.
